The Natural Yirgacheffee Chelbesa coffee comes from Worka Chelbesa in Ethiopia's Gedeb district, an area with dense, semi-forest plants, shade-grown coffee trees, and false banana plants, ideal for quality coffee. In 2019, SNAP Speciality Coffee built a wet mill in Danche, Chelbesa Village, to process red coffee cherries from local farmers. Ceramic fermentation tanks help keep the heat and speed up fermentation, improving the coffee's clarity. The process includes 72 hours of wet fermentation, one hour of soaking, and 12 days of drying on raised beds. Grown at 1,950 to 2,200 meters altitude, the coffee is harvested from November to January by 763 farmers. It is processed in various ways—washed, natural, anaerobic washed, and anaerobic natural—offering different flavours.
