This honey coffee comes from Gaia, a 3.5ha organic farm located in front of the Celaque natural park where high quality varietals grow at 1.650 masl under fruit and timber shadow trees.

GAIA coffee farm has an active social agenda including community infrastructure improvements, purchasing equipment, educational scholarships, food donations and technical training. Activities are designed to help and improve the welfare of the local community. Environmentally, GAIA farm practices organically, uses and promotes the use of organic inputs for coffee farming, and protects the forest of the farm and the surrounding areas.

Coffee is harvested at its optimal ripeness and left for three days in bags under shadow before it’s de-pulped without water. It is then laid in the solar dryer beds until it is dry (a process that can take depending on the weather from 14 to 30 days). Coffee is stored inside Grain Pro Bags for 30 to 45 days. Then it is taken to the dry mill to be prepared for export.
