a beautifully sweet and light pastry originating, so we believe, from Denmark. a  perfect accompaniment with our lars & margo coffee. i find the dough quite slow in rising so if time allows leave it to do its thing for several hours or even overnight in the refrigerator.  


kringle dough

550gm strong plain flour

3tsp dried yeast

1tsp seasalt

100gm caster sugar

350gm chilled butter

100ml milk 

3 eggs


filling

110gm chopped hazelnuts

40gm ground almonds

200gm caster sugar

250gm butter

150gm raisins


to finish

1 egg 

50gm flaked almonds



either in a mixer or a bowl combine the dry ingredients together. 

add the chilled butter and rub in to create a breadcrumb texture. 

warm the milk to tepid and combine with the lightly beaten eggs. 

add to dry ingredients and combine to form a dough. 

on a lightly floured surface gently knead until the dough is beautifully smooth. 

set aside in a bowl, cover with a damp tea towel and leave for a few hours in a warm room or overnight in the refrigerator.


while the dough is rising combine the nuts, sugar and butter to form a paste. 

chill in refrigerator. 


line a large baking tray


once the dough is ready turn out on lightly floured surface. divide into 3 equal parts. 

roll each part into rectangles. 

take the top third down to the centre and the bottom third up to create a layered square, rotate by 90 degrees. 

repeat once more.

roll each square into a rectangle measuring approx 28cm in length by 16cm wide

divide the filling into 3 parts 

place a strip of the filling lengthways down the centre of the dough.

sprinkle the raisins on top.

tuck each end over by 1cm

carefully fold one side of the dough over lengthways and then the second. 

set aside once more to rise for about an hour.


heat oven to 210 degrees

the three kringles can lay side by side on the lined baking tray.

brush with egg and sprinkle with flaked almonds

bake for 15-20mins until lightly golden.

leave to cool in tray.


slice and serve with a lars & margo coffee!

variation - how about adding some super dark chocolate (coarsely chopped), plus the rind of 1 orange combined with the chopped hazelnuts. maybe reduce the sugar…..give it a go!
