Lars & Margo presents to you our very first yeast fermentation coffee by specialist coffee producer Wilton Benitez. Leading the way in coffee fermentation (with a background in fermentation technology used in wine, beer and cheese) Wilton has taken his expertise to control key variables in coffee processing. Three essential factors are consistently followed - the precise fermentation process, the use of tailored microorganisms and the act of sealing in flavours using a hot and cold water technique.

Jules Greaves www.instagram.com/julesgreavesartist who kindly donated her image for our limited edition bean run. Inspired by the every day, the domestic and the natural Jules works in the brightest of brights with subliminal undertones of a deeper conscience.
